Happy Valentine’s Day everyone!
Sadly, I can’t be with my actual boyfriend until this weekend due to that whole pesky college thing, so I instead spent this day of love with my other boyfriend, Gym.
After a nice early morning sweat in Amy’s Ultimate Conditioning class at Crunch Union Square, I had an excessive amount of time before my first class.
So I decided to be brave and attempt PB Finger’s Greek Yogurt Pancakes
and it was a success!
I made slight variations due to what I had in my kitchen:
-3/4 cups oats
-4 tablespoons egg whites
-1 container of plain, non-fat green yogurt
-and a spoon full of cinnamon
Directions:
- Spray pan with cooking spray and heat to a medium heat
- Combine all ingredients and blend until it is a liquid-y batter
- Pour batter onto the warm pan to form four-ish pancakes
- Allow to cook until edges start to harden, about three minutes
- Flip pancakes and allow to cook until batter is no longer runny, about two more minutes
- I topped mine with a banana, syrup for dipping, and even more cinnamon
Not only was it edible, but also delicious. Who knew that I could make pancakes AND that greek yogurt could make such delicious pancakes? certainly not me
Can’t wait to make these again with other flavors of greek yogurt

O0o that looks nummy! I need to start using more cinnamon 🙂
