it is unreal how the weather went from glorious and springtime yesterday, to horrendous and dreary today

The weather has made me super lethargic and lazy on this Friday night. It is my first weekend of the semester without traveling or having a guest sleep over all weekend, so this night of relaxation feels well deserved. I am also about to enter the final week before opening for my show, which means all night rehearsals followed by 8 performances. Before I know it, I’m boarding a plane to California for spring break…..
But anyways.
Cooking is most definitely not my forte, but tonight I made a delicious, protein chocolate chip cookie IN MY MICROWAVE. so easy, even I can’t mess it up.
Here’s the link to the original recipe Thanks to Peace Love and Oats. I made a few variations for what I had in my kitchen.
My cookie contained:
1 T of Flour (I currently only have white flour in my apartment)
1 scoop of vanilla protein
1/2 tsp of baking powder
1 packet of stevia
1/2 tsp vanilla extract
1 T apple sauce
1 1/2 T of Almond Milk (what I have in my apartment, any milk will do)
couple of chocolate chips.
First mix all the dry ingredients in a microwave safe bowl except chocolate chips
add all the liquid ingredients except milk and stir
add the milk and stir until it is liquidy
add the chocolate chips
microwave for 30 seconds, or more depending on what consistency you want.
I like my cookies doughy and gooey
the result? an odd looking, but delicious and gooey cookie mess
Next time I will probably skip the stevia, I’m not a huge fan of how it tastes when baked into things. Even so, this cookie was delicious. All my chocolate chips melted in the bottom for a delicious treat.
