as much as I miss being home with family, friends and the boy, there’s is something lovely about returning to the land of perfect weather and beaches.
confession: I absolutely love food shopping. In fact, I love it more than I love actually preparing and eating the food that I just purchased… there’s just something about walking through whole foods or trader joe’s and putting fresh yummy food in my cart that i loveeeee.
lunch today was an old favorite and a new experiment: chicken salad + asparagus on the side.
chicken salad tends to be my go-to lunch because it’s super easy and I can make multiple at once. Today’s was the usual: 1 grilled chicken cut up, sliced up grapes, a spoonful of mayo and a bit of pepper. I love that there’s another tupperware of chicken salad ready to be eaten in the fridge.
then I decided to attempt to cook asparagus. Keywords being attempt. I had never had asparagus until this summer and learned that when cooked right it is really really good. My diet is usually a bit skimpy on vegetables so incorporating asparagus into my lunch seemed like a good plan
I used Whole Foods already cut asparagus (ahhh laziness!), 1 table spoon of olive oil, and the juice from 1 lemon. Next time I will definitely not be using all the lemon juice– wayyyy too much.
First, preheat the oven to 400*
Next, Spread the asparagus out on a baking sheet. Drizzle with olive oil and lemon juice. Toss the aparagus around to coat all sides of it.
Pop in the oven for 20-25 minutes.
top with salt and pepper.
the result was good, but not great asparagus. Next time I will definitely use less lemon, and possible use the zest instead of the juice. Also, the bottoms were a bit burnt so I might play around with temperature and cook time.
All in all though this is a huge deal for me! Not only did I eat my veggies but I also attempted to cook something new. I’d say that’s a success!
So, first my AFAA group fitness material was waiting for me when I got back to California
then my package from NASM personal training schtuff arrived
(i love that it came in a NASM box with a NASM backpack.)
and therefore my afternoon has been spent studying.
note 1: I’ve totally reverted back to my nerdy high school and college ways of highlighting and post-it noting like it’s my job.
note 2: that banana bread larabar was super disappointing and left a weird aftertaste. I decided to swap it for a peanut butter cookie one– a much more delicious choice.

I haven’t done science-y science since sophomore year of high school. That was 7 years ago! In high school chemistry was my weakest subject– I’ve never struggled so much in a class! Having to read about chemistry again is making me nervous for all this studying I gots to do…
Alrighty, enough procrastinating, time to get back to studying….
Or I might instead finally watch this weeks episode of “how I met your mother”… both are obviously priorities in my life.
