new years eve 2012/2013
welp! 2013 has been a bit cray cray balancing work, life and a cold/laryngitis. Yep, I’ve had a nasty cold and no voice for all of 2013.
a friend of mine posted that on Facebook and it could not have come at a more perfect time. It’s only a few days into 2013, but the theme of my year is creating my own opportunities.
If I learned anything during my 4 years at theater school it’s that things aren’t just going to happen if you sit back and wait. It’s all about making your own opportunities and making the change yourself, no?
So right now I’m working on making my own dreams come true instead of waiting for someone else to help. I’ve got exciting ideas swirling around in this head of mine and can’t wait to make them a reality.

So it’s a new year….
My big goal for 2013 is maintaining my current habits. Over the course of 2012 I kicked it up a notch in the fitness and cooking department, something I am incredibly proud of. Something I am working on right now is continuing on this road, even when life is crazy and gets in the way.
Even though I’m been working weird hours with my new job, cooking my own meals has become a staple in my day. It is my time to nourish my body. Granted I don’t make ambitious meals, but they are relatively healthy and satisfying
Recent favorites:

does making fried rice seem tedious with all that cutting? pre-cut all your veggies when you have time! I cut up a zucchini and carrots over the weekend and split the portions in tupperware.
easy chicken tenders
made by dipping cut up chicken breast into flour –> a mixture of egg + pepper –> a mixture of bread crumbs, panko, pepper, salt and garlic.
Bake at 425 degrees for 15-20 minutes (or until cooked) and you’ve got dinner
pasta + turkey meatballs
my favorite baked turkey meatballs + microwave barilla. yes, you heard me, microwave pasta.
There’s currently no water in my apartment building, but fear not, barilla’s to the rescue with their excellent microwaved pasta. Also there is nothing that makes me happier than having a bunch of meatballs in my fridge. I know what I’m eating for snacks and dinner all week 🙂
lots and lots of oatmeal
(is there nothing more comforting than a bowl of apple cinnamon oatmeal after a long day of work?)
It’s really quite amazing how much more cooking I do now that I have a few easy recipes I know I can make. One of the best things I did for myself in California was challenging myself to cook every day and try new things when I had the time to mess around in the kitchen (not to mention I had a huge kitchen to play around in). I now have all those recipes from california that I feel confident making in my tiny kitchen even when I don’t have a lot of time.
And one last thought.

I was at the NoHo class this morning. You were able to get into 2 of the freebies? if so impressive because getting into the one was difficult. I’m definitely addicted to soul cycle, just not the price tag….
