After reading about Brittany’s Rosemary Chicken I was inspired to make my own chicken dish last night. Instead of using drum sticks I used thin slices chicken breasts, dipped in olive oil and topped with salt, pepper and rosemary. I cooked these babies in the oven at 400 degrees for about 15 minutes, flipped ’em, cooked for 5 more minutes and bam, delicious chicken dinner.
On the side I enjoyed some zucchini and eggplant sautéed in olive oil with a tiny bit of garlic powder, salt and pepper.
Look ma, I ate some veggies!
Today I got home from my 5:15AM work shift (yup, 5:15AM) + back to back spin classes absolutely ravenous.
Instead of rehashing the same exact dish I had for dinner last night I decided to switch it up and use the rosemary chicken in chicken salad with apples and mayo.
1 easy to make chicken, 2 delicious meals. Who said making your own food had to be tricky
