Oh boy do I have lots of food to talk about.
As ah-mazing as #back2backGreenDay was, it threw off my routine for the rest of the week. I was sleepy, my apartment was messy and I was too overwhelmed to figure out what to eat.
My favorite turkey meatballs ended up coming to the rescue. When in doubt I know I can make a batch of meatballs in less than 1 hour
Love these babies because they can either be a snack or paired with other things for a meal.
My other favorite from the week was an unplanned visit to Chipotle. Freshman year I was all about the chi-poddle and loved going there on Sundays with everyone from my floor. What I didn’t love was the inevitable Chipotle belly ache I experienced after. I finally realized that most likely the cause of my Chipotle Belly Ache was thanks to my belly’s hatred of dairy. This time around I omitted the cheese and sour cream…. which also made it healthier. Win win
brown rice + chicken + black beans + salsa. YUMMMM. And no post-Chiptole Belly Ache! Guess I’ll be stopping by the Chipotle near work more often…
So after a week of eating lots of meatballs and takeout, I am completely prepared to kick butt in the food department this week
Is it just me or is Whole Food shopping in Manhattan a workout in itself? Trying to navigate the crowded aisles is ridiculous and then carrying my sack loads of food home is a hard core arm workout….
But I’m pretty sure my refrigerated the the most packed it’s ever been
so. much. food. (okay fine, this is a lot of food for me considering I usually just get food on the go)
First up is a protein packed veggie burger recipe courtesy of Fitnessista.
Pretty easy to make, and just blending a few ingredients in the food processor. I omitted the mustard and just relied on garlic, salt and pepper for flavor. Looking forward to having these as a quick option all week.
Later this week I’m planning on fighting the Chipotle cravings by making my own mexican burrito bowls.
I’m thinkin’ mango salsa + black beans + brown rice and protein will be quite tasty for lunch or dinner.
Usually I’m not one to food prep in advanced for the week. I really wish I could get in the habit since it would make the rest of the week easier, but often times I’m traveling on Sundays or the boy is here until Monday morning… and by Monday I feel like I’ve been shot out of a cannon and go-go-go until I have a day off. Since I’m currently juggling a million jobs and work a wacky schedule it’s amazing to take advantage of my tiny bit of free time. Should make the rest of the week less stressful
