It’s only a liiiiittle disturbing to think it’s only noon and I already worked a 5+ hour shift. Right now I’m grateful to have a nice lunch break before heading over to job #2 this afternoon. Clearly, rest is for the weary 🙂
For a quick lunch I made some fried rice with scrambled egg, frozen veggies and used Bragg’s Liquid Aminos and Sesame Oil spray for the first time. The thought of using Liquid Aminos in place of my beloved salty soy sauce was a bit concerning, but I am happy to say the rice turned out as good as it always does. Crazy that this stuff tastes so similar to soy sauce, but with less sodium. The spray was great since I tend to add way too much oil while cooking, it kept my portion under control. Successful experimenting.
After training a client this afternoon I’m hoping there’s enough time to squeeze in a run before taking a strength training class and seeing a show tonight. The past few days have been outrageously cold for April and I’m a wimp when it comes to weather…. so I’m already getting behind on my 10k training.
While I was home over the weekend for my grandpa’s 90th birthday party (which is a seriously awesome thing to get to celebrate) I went for a run in my parent’s neighborhood
I forgot how BRUTAL hills are. I’ve been spoiled recently in Manhattan running on relatively flat roads so the “sprawling hills of Westchester” whooped my butt during this 2 mile run.
at least the scenery was nice. Now I just gotta hope for some warmer weather for the rest of the week because I need some running motivation.
With my birthday coming up in only a few weeks I started thinking about some new challenges I could make for myself. Last year I did a 22 day yoga challenge for the month of May and in honor of my 22nd birthday. It was the perfect challenge at the time since I couldn’t do most physical activities thanks to rotator cuff tendonitis, and I was seriously obsessed with yoga at the time.
This year I’m going for a no dessert challenge.
I’ve been eating alotta vegan peanut butter cheesecake recently—- Damn you Peacefoods Cafe! There’s nothing wrong with a little treat every so often, but every so often was slowly becoming daily for me. “Oh I had a long day, I just want some cheesecake” became my excuse night after night.
I decided to quit cold turkey on April 16th until my birthday (May 16th). No more vegan cheesecakes, no dairy-free ice cream, no cookies at work, no dessert for the month. For me personally this is a good approach because it allows me to have more self control– I am not tempted to just have 1 homemade cookie at work which soon turns into 5 because they were so good.
With that said… I did cheat a tiny bit on Saturday at grandpa’s birthday. There was homemade (dairy) chesesecake from my uncle. Since my belly isn’t a fan of dairy I knew one bite would be more than enough for me– anymore would’ve ended in a dairy induced bellyache either way. Hopefully that one, delicious bite of cheesecake will be the last dessert I enjoy until my birthday. On May 16th though you bet I will be loving me some vegan peanut butter cheesecake once again.

My baby is finally 21!!!!!
Instead of getting each other big birthday gifts this year we decided going to Disney World was a much better choice. Can’t wait to celebrate our birthdays with Mickey Mouse next month 🙂
