April showers better bring some May flowers…. and beautiful spring weather. Despite crummy crummy weather I tried to make it a productive day by doing all the things I won’t have time to do all week- food shopping, cooking, cleaning my apartment, going to the bank, going to the library and laundry… plus I also squeezed in a yoga class, barre class and taught zumba. By the end of zumba my legs were not happy with me and my life choices….
I am super proud of my now organized coat closet
so. many. shopping bags. I’m pretty sure it’s every single shopping bag I’ve brought into my apartment since moving here three years ago PLUS bags from birthday gifts. That’s a lot of bags crammed into a tiny closet
And now:
Better than it was. I’ve been terrified of this closet for over a year now, convinced that there would be dead cockroaches and rodents living in the pile of bags.
See, I can clean… sometimes.
Over the weekend I had dinner with my good friend Ali from sleep away camp at a nearby vegetarian restaurant. She’s a vegetarian and I only eat chicken and turkey + eat as dairy-free as possible. We started talking about what food we miss the most– do you remember what a hamburger tastes like (it’s been over 10 years since my last hamburger!) and what do food you miss the most. Today it hit me that I seriously miss mac and cheese. Is there a better comfort food out there?
Walking around in the cold rain all morning had me craving mac and cheese like no other, so I decided to be brave and attempt Angela’s vegan cheeze sauce.
The thing with “imitation” food is that it will never taste exactly the same. Fake cheeze will never taste exactly like cheese, it just won’t. But this sauce creates the same essence of velvety cheese, plus it was super easy to make.
I paired my vegan cheeze with whole wheat pasta and not-so-vegan turkey meatballs with a touch of tomato sauce
sprinkled with bread crumbs to make it fancier. I was throughly impressed with my homemade lunch.
I’m going to try really hard this week to make all my own meals until Friday night when the boy comes into the city. While I do cook and prepare a decent amount of my own food being in Manhattan surrounded by delicious takeout food and delivery makes it easy to be lazy. After food shopping today I realized I definitely have enough food to last me the week which means I don’t need to get take out.
What usually gets me is eating meals on the go– it’s hard to plan ahead and prepare food in advanced when you work weird hours and won’t have a refrigerator or microwave at your disposal. Tomorrow I know there’s a staff fridge where I’m working in the morning so I’m thinking a batch of over night oats made tonight will be a quick and tasty choice for lunch. My typical on-the-go lunch is usually a wrap with hummus and turkey, but let’s be honest that’s a bit bland.
Sadly, it’s almost bedtime for this girl. Gotta be up at 4:30am for work!
