Happy Memorial Day! Hope you are all enjoying your long weekends. As much as I love coming back to my hometown in the suburbs to visit my family, friends and boyfriend, I’m already a bit homesick for NYC. Sometimes it takes leaving Manhattan to remind me how much I love it there.
One thing I love about home? Visiting Stew Leonard’s.
Stew’s is an EPIC maze of a grocery store in Connecticut and New York full of fresh food and fun animatronic characters.
RIP Twinkies.
After heading over to the Danbury Mall for some pre-Disney shopping, the boy and I couldn’t resist a trip to Stew’s. I have such fond memories of visiting Stew’s with my dad when I was little, it was our special bonding time together. Even as an adult I still love going there for some free samples of fresh food.
We enjoyed a few too many free samples of the apple cider donuts (DELISH) and decided to pick up some fresh pizza dough and veggies. I love cooking with the boy but it’s incredibly difficult to decide on a recipe that will suit both our needs– the only meat I eat is chicken and turkey, I try to eat dairy free, and I try to eat relatively healthy. He loves his meat and avoids most veggies. Half cheese, half vegan pizza with a side of asparagus ended up being the winning combo for us.
I was in charge of the veggies and made quick’n’easy roasted asparagus.
After washing the greens I put them in a plastic bag with 2 tablespoons of olive oil, a few shakes of salt, a bit of pepper and a bit of garlic powder. I then sealed the bag and made sure the fully coat the asparagus.
Popped them in the oven preheated at 425 on a cookie sheet and baked from for roughly 15 minutes.
Easy peasy. The boy even had a few pieces, which is saying a lot since he generally avoids veggies :). I tend to get lazy when it comes to vegetables– it’s feels like such a pain to buy them when I’m only cooking for myself and they will most likely go bad before I do something with them. Making this super easy side dish was a reminder that cooking with veggies can be incredibly easy with ingredients that I always have on hand.
The boy was in charge of the pizza.
I was impressed with his pizza rolling skills.
His side was topped with fresh mozzarella and shredded mozzarella, mine with a few bits of fresh mozzarella and daiya dairy-free cheese. I probably couldn’t skipped the real stuff and wouldn’t have noticed a difference.
The result? Tasty pizza we could both enjoy.
I’ll be spending the rest of Memorial Day weekend prepping for Disney and hanging out with some work friends tonight. My vacation has only just begun!
