It’s days like today that I have a total Carrie Bradshaw moment and think “Wow, I love this city”. What started off as a mopey, rainy day, turned itself around and ended up being a pretty kickass day if I do say so myself.
Highlight was definitely winning tickets to see Kinky Boots on Broadway tonight
I knew I was going to enjoy the show– I love me a good musical with fun dance numbers, but I didn’t expect to love it as much as I did. Definitely a fun feel good musical. I hadn’t won a broadway lotto in awhile so I was ecstatic when I heard my name called!
Workout(s)
My workout agenda for today called for a run + barre. I was honestly a bit excited to see that it was pouring when I woke up which meant the run would probably be cancelled. Mwuahaha. After hitting the snooze button multiple times I faced the dreadful weather for a barre class with my favorite instructor. Nothing like a great workout with a great instructor to put me in a good mood. By the time I got home and made lunch the sun was out and shining… which meant I no longer had an excuse to skip my 4 mile run…
The weather was PERFECT- a bit breezy and less humid after the storm and I ended up enjoying the 4 miles thanks to a new playlist. I’m still not running as fast as I know I’m capable of for some reason, but I’ll take 4 miles of feeling awesome and enjoying the run.
Lunch
Once I find something that I love and is easy to make I tend to make it all the time. So today’s lunch was, surprise, more channa masala with eggplant. Instead of sautéing the eggplants in olive oil on the stove I decided to roast them in the oven instead
into a bag went 1 diced eggplant, 1 tablespoon of olive oil and 2 cloves of garlic chopped. Mix it all up and put into the oven at 450 degrees for 15 minutes.
I definitely prefered them cooked this way. Eggplant tends to absorb oil so sauteing them becomes a bit frustrating when the oil keeps getting absorbed. This method resulted in less greasy eggplant so I was a happy gal.
And as always I mixed the veggie with some brown rice and a packet of channa masala, split into two portions so I can enjoy again tomorrow.
Dinner
I ended up grabbing dinner in Time Square since I won my tickets only 2 hours before curtain… not enough time to make a subway ride home worthwhile.
Sushi! I’ve been a bit squeamish about eating fish for a while but I’m trying really hard to bring it back into my diet since it’s a great source of protein… and I’m getting really sick of eating chicken all the time. I’m taking baby steps with my fish intake and ordered an inside out salmon roll with a salad and edamame. I’m a fan!
Like I said, I’m feeling very Carrie Bradshaw because today was pretty lovely– barre class, run on the east river, sushi and a musical, what’s not to love!
