It’s almost my bedtime but just wanted to say a quick hey hey before I’m off to bed.
Kicking off the week with 3 hours of science lectures always leave me in a “meh” mood, so today I tried to counterbalance all the not-so-fun school stuff with things I seriously love- creativity and fitness. Today was my first day of taking guitar lessons! I’ve taken guitar lessons here and there but not nearly the way I studied voice and understand the piano. I’ve really felt disconnected to the “old me” recently, the girl who spent her college days taking actings classes, African Dance and voice lessons. Playing the guitar today and talking about music for the first time in a long time was amazing.
After my lesson I was itching to go outside and run in the glorious 60 degree weather. Of course the day after I buy all these fancy running tights and long sleeve tops it’s warm enough to wear shorts and a tank top!
I couldn’t help but smile once my feet hit the running path, it felt so good to be in motion on this gorgeous unseasonably warm day. Once I got home I immediately texted my friend Sarah to ask her what Turkey Trot she was doing. I’ve been iffy about signing up for a Thanksgiving race since I haven’t been running all that consistently and I was worry about weather, but my run today made me confident that a 5 mile race will be great… and work up my appetite for stuffing and pecan pie :).
Back home I tried a new-to-me recipe for tofu + portobello enchiladas.
Vegan, could easily be made gluten free, and pretty delicious. First I sauteed the tofu and portobello mushrooms with garlic in olive oil, added some chili powder + cumin after 4 minute and cooked it a bit more, then lined the bottom of a casserole dish with enchilada sauce and rolled up some enchiladas. Baked for 25 minutes at 350 degrees and ate them while watching How I Met Your Mother. I’m looking forward to having left overs all week.
Time to start getting ready for bed since I’m getting up nice and early for work….
