After the race on Saturday I went home to my parent’s house in Westchester for precisely 24 hours to visit the boy and some friends. Ironically enough my parents were in the city. Sorry daddy.
Sunday morning I hit up the gym for some BodyPump
It’s been a hot second since I stepped foot in a traditional gym! As much as I love boutique fitness (and more importantly love that taking free classes is a perk of my job) sometimes I miss the traditional gym setting and sense of community. BodyPump was the perfect workout because the thought of doing anything that required jumping around after my painful 10k was pretty unappealing.
The weather Sunday was downright perfect so the boy and I made the most of it and took a walk around my neighborhood. The green green grass perplexed me. 6 years of sitting living in the city will do that to ya.
It was a quick and lovely trip to the suburbs. But I think 24 hours is more than enough for me, sleeping in a super quiet house freaked me out since I’m used to the city noise.
Today marked the start of my third week of working full time. It’s honestly flown by already and the world of chemistry feels like it happened a lifetime ago. There’s still LOTS to learn and some things I’m still adjusting to, but all in all I’m absolutely loving full time and loving what I do.
This morning I started off my day with a killer workout at The Fhitting Room. Always a treat when I get to take a class there… and always guaranteed to be a buttkicking workout.
During my lunch break a coworker and I decided to hit up S Factor, a pole dancing studio. I’ve never taken pole and warned my co worker, a dancer, that I was going to provide her with a great deal of entertainment considering I’m not graceful… and I’m just plain awkward.
The room was dimly lit and had no mirrors making it a little less awkward to a newbie like me. As expected hoisting up my body weight took a great deal of upper body strength… and in the exact opposite plane of motion than what I’m used to thanks to trapeze. I don’t think it will necessarily replace my love of flying through the air with the greatest of ease, but it was still a really fun, different workout. I can see why people get hooked!
Since I started working full time I’ve been struggling to plan out my meals. I got used to coming home in the middle of the day from work or school to make myself lunch (usually while watching Sex and the City). Now I have to plan ahead if I want a homemade lunch and make something the night before.
I’m pretty psyched about tomorrows lunch which I came up with on the fly while food shopping earlier. After picking up some brussell sprouts that were on sale I wanted to bring back an old favorite of mine, apples and chicken sausage with a new twist. While waiting in the epic Whole Foods line I looked up brussell sprouts and apple recipes for inspiration as well.
Balsamic Chicken Sausage, Brussel Sprouts and Apple
Ingredients:
- Chicken sausage “links” (I use an apple flavored sausage. Make sure it’s pork-free if that’s a concern!)
- 1 apple
- 2 cups Brussel sprouts, stems cut and chopped in half ( I ended up with a little less than this)
- 2 tablespoons of olive oil
- 1 tablespoon of balsamic vinegar
- salt
- pepper
- Preheat the oven to 400 degrees. While the oven is pre-heating, cut up the brussel sprouts and chop up the apple into bite sized pieces
- In a large bowl mix 1 tablespoon of olive oil with the ‘sprouts and apples, plus some salt and pepper
- Once the oven is preheated, bake the mixture on a baking sheet that’s covered in tin foil for 15 minutes
- While the ‘sprouts and apples are baking, sautee the chicken sausage in a skillet with the rest of the olive oil until cooked.
- After 15 minutes, pour the balsamic vinegar over the ‘sprouts and apples and put back in the oven for 5 more minutes.
- Mix it up, put it in a tupperware and call it lunch.
