I won’t pretend that I’m a food blogger. Or that I even spend much time cooking in my teeny tiny kitchen. Since I started my ongoing partnership with Argentine Yerba Mate at the beginning of 2018 it’s been fun for me to challenge myself on the cooking front. It’s help me realize I actually do enjoy cooking and creating recipes, even if I’m not super confident in the kitchen.
Like any recipe I post, today’s recipe is super easy to make. All you need to pancake mix (I used this one) and instead of using water with the mix, swap for brewed Argentine Yerba Mate tea. I made these over the weekend and couldn’t stop snacking on these tea infused little pancakes all Sunday afternoon.
Not only does the Argentine Yerba Mate add a tasty tea flavor to the pancakes, but yerba mate is also a great source of antioxidants — even more so than green tea is. Studies have shown that yerba mate aids in digestion. And of course my favorite benefit of yerba mate is that it contains almost as much caffeine as a cup of coffee, but minus the intense caffeine jitters of coffee. So yes, these are some powerful, caffeinated pancakes I’m sending your way.
Recipe: Yerba Mate Tea Infused Pancakes
Directions:
First, brew your yerba mate tea. The amount of water you boil should reflect the amount of water noted in your pancake recipe mix. For example, my pancake mix called for 2/3 cup of water and that’s how much I boiled.
Add roughly 1 tablespoon of yerba mate tea for every cup of water you boil (if you’re boiling 2 cups, use 2 tablespoons, etc.) or more for an even stronger brew. Let seep for 3-5 minutes.
Strain loose yerba mate leaves and allow tea to cool down to room temperature. Once cool, mix tea with pancake mix (and any other ingredients your pancake mix calls for) and cook on a greased pain accordingly. Follow directions on your pancake mix for how long to cook each side before flipping.
I personally decided to keep my pancakes itty bitty so I could munch on them as a snack dipped in maple syrup, but feel free to make bigger pancakes if that’s what you prefer!
