I tend to steer away from chatting about what I eat here. For starters: I’m not qualified to really talk about food. I’m a yoga teacher and fitness instructor, NOT a dietician. I’m also pretty boring when it comes to what I eat. For the most part, I eat the same thing for lunch every day and I cycle through the same favorites for dinner (ramen, sushi, and sweetgreen…)
I wouldn’t say that I’ve gotten creative in the kitchen over the last few weeks of quarantine. Cooking is still not my strongest suit. But I’ve found some easy staples that work for me — and don’t require me to go food shopping all the time. A pandemic win if you ask me.

Is there anything more comforting than a peanut butter sandwich!? I’ve been toasting an Ezekial’s English muffin (I like the sprouted ones) and slathering on the Justin’s Honey Peanut Butter… and then I add more honey because why not. The frozen English muffins are great for those that live alone. You don’t have to make your way through a whole loaf of bread solo before it gets moldy.

I love smoothies but stopped making them because my tub of spinach would always go bad before I could finish it.
My favorite that I’ve tried so far is the banana with greens mixed with oat or almond milk. It’s got:

- spinach
- kale
- wheatgrass

Applegate Chicken Nuggets + Dr. Praeger’s Spinach Littles:
This combo makes me feel like I’m 5 years but it’s perfect when I’m feeling lazy or I don’t have anything fresh to cook. I make sure I always have both in my freezer and of course serve with ketchup for dipping.
Modern Table White Cheddar Vegan Mac and Cheese + Applegate Oven Roasted Turkey:
Another lazy dinner combo that a 5-year-old would probably also love. I’m not vegan (obviously — I’ve already talked about turkey and chicken in this blog post) but typically eat dairy-free because I’m lactose intolerant. The Modern Table mac and cheese is by far the best boxed vegan mac and cheese I’ve been able to find taste-wise. It makes that quintessential mac and cheese noise (you know what I’m talking about I’m sure!) which isn’t true of all vegan alternatives.
I’m partial to Applegate’s deli meats for some reason but don’t know if it’s necessarily “better” than freshly-sliced meat from the deli counter.
Kale, Chickpeas and Brown rice with Nutrition Yeast:
I make this recipe almost every single day. It’s SO easy, it’s almost impossible to mess up and I’ve figured out a way to perfectly portion out the ingredients so nothing goes to waste. It’s got a nice cheesy flavor and the only fresh product you need is kale.
