Cooking for one can be so challenging. I personally don’t love having a ton of leftovers — you can only have chili so many times in one week! I’m also not great at cooking so I’m always on the hunt for fast, healthy meal ideas that are perfect for someone that lives alone.
I’ve been really loving Daily Harvest during these last few months. They have a wide assortment of smoothies, harvest bowls, flatbreads and soups that come frozen. It’s easy to have them on hand for nights when I’m feeling lazy and my fridge is almost empty. Their products are full of veggies and the ingredients are simple, nothing weird in there.

Spinach + Shiitake Grits Harvest bowl with Eggs, Avocado
Oh, this harvest bowl is SO good. It’s the perfect brunch when you’re craving something hearty but quick to make. I personally like to add scrambled eggs and avocado for a little extra protein and fat, but it’s also tasty as is.
Banana + Greens Smoothie and Peanut Butter on English Muffin
I have this combo for lunch or dinner at least once a week. It’s perfect for days when I’m feeling hangry and need something ASAP. I personally like to use oat milk as the liquid for the smoothie as I usually have some in the fridge, it makes the smoothie extra creamy. You can always use whatever milk you like or even coconut water.
I used to get so frustated that bread would go bad before I could finish the loaf. Living alone problems. I started buying Ezekials frozen English muffins. I just defrost one in the microwave when I’m ready to toast them. A great thing to always have on hand!
Cauliflower + Leek Soup with Eggs on a Tortilla
Now that the weather is getting chillier, I’m craving ALL the soup. This soup is the epitome of comfort food and surprisingly flavorful for something so full of veggies. If I’m having this soup as a meal rather than a snack I like to pair it with eggs on a tortilla. When in doubt, I add an egg to most dishes 😂
