Without a doubt May is my favorite month
The weather is finally consistently nice, it’s my birthday month and I’m going to Disney World at the end of the month. So yeah, I’m definitely a fan of May.
The “no dessert” challenge is still going strong. I am proud to say that there is a box of Samoas in my apartment that remain unopened. Come May 16th, though, I will be most definitely be enjoying those Girl Scout cooked and some vegan cheesecake to celebrate my birthday and month sans dessert.
This week I decided to challenge myself to something new: avoid eating out and getting takeout from Monday morning- Friday afternoon. For some this might sound like no big deal, but for me, a New Yorker, this is not typical. I strive to cook or prepare a good chunk of my meals, but without fail there’s always a quite a few meals any given week that are salads on the go from Cosi, an indulgent vegan panini from Peacefoods Cafe after a long day or delivery chicken korma just ‘cuz I wanted some Indian food. While there’s nothing wrong with occasionally getting Chipotle for lunch at work (brown rice, chicken, black beans and salsa is where it’s at!) I end up spending a lot of money food shopping every week and an additional sum of money because I ended up being too lazy to make my own food.
Well not this week. I food shopped on Monday and have not allowed myself to spend any additional money on food. To my surprise it hasn’t been very difficult, it just takes a bit of planning.
My meals this week so far have been:
– My usual english muffin with peanut butter for breakfast
–Overnight Oats. Super easy to prepare the night before and bring in to work the next morning. I even brought some almond butter and crunchy cereal on the side to use as toppings.
– Pasta with vegan cheeze sauce and turkey meatballs
– fried rice with eggs, carrots and zucchini
– Anne’s black bean burgers. I followed the recipe almost exactly and loved the final product. I had a bit of difficulty getting everything to mix though because my food processor is itty bitty.
– chicken sausage + apples sautéed in olive oil
– a few green smoothies post workout
– and today for lunch I’ll be having my usual boring wrap with hummus and turkey because I ran out of oats.
I don’t know if I could necessarily always live this way Monday-Friday afternoon because I enjoy going out to dinner with friends during the week and sometimes I can’t avoid grabbing a meal on-the-go. However thanks to this “challenge” with myself it forced me to eat healthier and actually use the food in my apartment before it goes bad. I now know I can make it through the week… I just gotta be prepared
This weekend, though, is all about going to delicious restaurants with the boyfriend. On Sunday we are going to New Haven for a show and we are both SO excited to get some New Haven pizza.
I might eat dairy-free for the most part, but good pizza is definitely worth the bellyache….
