It’s Thursday! In college Thursday was my favorite day of the week, because it was almost the weekend (even though my Fridays usually involved 10 hours of class), most of my homework was done and most important it was TRAPEZE NIGHT.
Trapeze Thursday meant flying, good friends and ridiculous costumes.
Thursday’s are still arguably my favorite day of the week since the bulk of my schoolwork is over for the week but tonight I also get a bonus and will be flying with my very good friend Samantha. I can’t believe we’ve been flying together for 4 years now! Even if my flying is terrible tonight I know it’s going to be a fun class.
I’ve been setting early alarms almost every day in an attempt to motivate myself to get out of bed and workout. I have yet to actually get out of bed early enough for a run before class but today was FINALLY the day. Running on the West Side at 7am was GLORIOUS, filled with motivating runners, perfect weather, and a great way to kick off my Thursday.
Afterward I took a speedy shower and gobbled down an english muffin with peanut butter before chem lab
I swear theater school and pre-med are practically the same thing! You still have to wear silly outfits and today we even got to play with food dye and make little pointillism paintings!
After 4 hours in the lab I was HUNGRY and oddly craving huevos rancheros. They’ve become my new go-to at brunch (much healthier than my beloved french toast) but my usual brunch buddies, the boy and my parents, won’t be here this weekend. Turns out huevos rancheros is pretty easy to make on my own and I already had all the ingredients!
I mashed up ~1/4 cup of black beans (washed and drained) with a fork and added a drop of water for moisture. Next I seasoned the beans with some salt, pepper, garlic powder and onion powder and microwaved the mixture for 15 seconds.
I then heated up a pan, sprayed it with cooking spray and cracked 2 eggs on the hot pan. I was kind of clueless about what to do but let it cook for 1-2 minutes and then flipped both eggs over. Once they were fully cooked I put them to the side.
Last, I warmed up a whole wheat tortilla in a small pan on the stove. If you’re feeling super lazy, microwaving the tortilla will do the trick.
To put it all together: schmear the bean mixture on the tortilla and top with salsa (I used peach salsa from Trader Joe’s since that’s all I had). I ate one of the eggs on it’s own and then put it all together into a nice huevos rancheros burrito.
Time to get some work done before trapeze class?
