Being back in school after a long break always feels… weird. My fellow postbacc students were saying how they started to feel bored after a few weeks on break. I on the other hand full on embraced winter break and got a little too used to doing nothing. Oops.
This morning was day two at my new job!!! At the end of 2013 I left my front desk position at a mega fitness studio because the early morning hours were hard to juggle with my workload at school. Things worked out nicely and I was offered a part-time position with Classtivity ! I was already a huge fan and user of Classtivity so I was super excited to be offered this great opportunity. So far I’ve been doing a little bit of everything from customer service to social media.
After work I headed home to make lunch (and watch “Sex and the City” reruns…) before chem lab. I decided to bring back an oldie but a goodie– asparagus+pear over argula salad
This was one of my “go-to” recipes during the summer because it’s quick and simple– just sautee the pears and asparagus in olive oil until cooked, throw it over arugula and add balsamic vinegar.
For some protein I had a few chicken bites dipped in ketchup on the side
I have a habit of buying chicken and never cooking it because I kind of hate dealing with raw chicken. It still makes me a bit squeamish. Last night I was sitting around doing nothing after watching How I Met Your Mother (BEST. EPISODE. EVER.) and decided to man up and cook some chicken so it was done for the week.
The recipe was pretty simple– preheat the oven to 375. Cut up roughly 1 pound of raw chicken thighs into small bite sized pieces. Spray a baking sheet with coconut oil or any other cooking oil. Dip in a mixture of eggs + salt, pepper and garlic powder and then dip in another bowl filled with almond meal and whatever spices you like. I wasn’t very exact with the measurements of anything and refilled my almond meal bowl when needed. After dipping each chicken bite in the eggs then almond meal, place on the baking sheet. Before baking, lightly spray with cooking oil. Bake for 20 minutes or until cooked.
The finished product was DELICIOUS. I’m looking forward to eating them all week.
Chem lab was short and sweet since it was the first day. Getting out early meant I could go to CrossFit before dinner! I like to check out the WOD on the website before hand so I know what kind of torture is about to happen. I was super excited to see that today’s workout used KETTLEBELLS! Arguably my favorite piece of fitness equipment. I even wore my brand new kettle bell shirt to prove my love

Turns out “american style” kettlebell swings aka ones that go over your head are quite challenging both mentally and physically. It’s a bit scary to haul that thing over your head! One of the hardest things about CrossFit for me has been the fact that I’m not good at it. I’m not saying my form is 100% perfect in other classes, but I’m usually familiar with most if not all of the moves in your typical strength training class. At CrossFit almost everything is new to me, or has a slightly different form cue than what I’m used to. It’s been a very humbling experience. Taking these CF classes has definitely piqued my interest to learn more about olympic lifting and how I can incorporate it into my own training.
Dinner was leftovers from last night
Last night I made this great sweet potato and lentil curry recipe for dinner so I would have some leftovers for the week. I didn’t have all the spices so improvised with what I had and added some zucchini. It was a hit and just as good the second time around.
Time to go watch a little bit of TV before bedtime!
